know Pikliz!
And… if you like the hot stuff
then this is for you.
Pikliz is a favorite condiment
that is added to just about any food.
Ingredients:
1 large cabbage
Fresh string beans
5-6 carrots
Small box of frozen peas or fresh peas will do
10 Scotch bonnet or Habanero peppers
2 large onions shredded into long strips
A gallon of white vinegar
1 large plastic or ceramic bowl
1 large knife
Spatula
Wooden spoons
Canning jars and lids
This condiment is sprinkled over meats, rice, you name it.
Let this sit for several
days after you have canned the mixture.
Wash the canning jars and lids
in boiling water.
Set aside.
1. Cut and shred cabbage Julienne style.
2. Cut carrots into circles or julienne them.
3. Defrost, wash and drain the frozen peas.
4. Wash peppers and poke them with a sharp knife or you may
slice them for a stronger flavor.
5. Wash and clean green beans and cut into 1 inch chunks.
6. Slice the shallot into thin strips.
You may chose to layer the vegetables into your canning
jars or follow the next step.
In large mixing bowl combine
shredded cabbage, carrots, peas, onions, string beans, shallots, peppers and
mix with a wooden spoon.
Add vinegar, squeeze ½ of a
lime and salt over the vegetables and mix together. You may choose to compress with a plate for
24hrs or put mixture into canning jars using a large funnel then pour the
liquid over it. Then refrigerate or give as gifts.
